Head Winemaker Fergus Elias set out to redefine the country’s signature white grape, creating a wine of structure, texture and balance. A small portion aged in oak, the rest guided by wild fermentations, the result is a Bacchus of extraordinary character. Crisp and floral, yet with a smoky, mineral depth.
